Ingredients
  

  • 1 cup dried lentils (red or brown, rinsed and drained)
  • 4 cup water or vegetable broth
  • 1 cup fresh herbs such as parsley, cilantro, dill, and mint, chopped
  • 2 cup leafy greens spinach, kale, or chard, chopped
  • 1 onion medium, finely chopped
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp sumac or lemon juice optional for tanginess

Instructions
 

1. Prepare the Lentils

  • Rinse the lentils under cold water until the water runs clear. Set aside.

2. Sauté the Vegetables

  • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion and garlic, and sauté for 5-7 minutes until softened and fragrant.

3. Add Lentils and Liquid

  • Stir in the lentils, then pour in the water or vegetable broth. Bring the mixture to a boil, then reduce the heat to low. Simmer for 20-25 minutes, or until the lentils are tender.

4. Add Greens and Herbs

  • Stir in the chopped greens and herbs. Let the pottage simmer for another 5-10 minutes, allowing the greens to soften and the flavors to meld.

5. Season the Pottage

  • Add the cumin, coriander, salt, pepper, and sumac or lemon juice (if using). Taste and adjust the seasoning as needed.

6. Serve Warm

  • Ladle the pottage into bowls and serve it warm. It pairs beautifully with flatbread, unleavened bread, or a simple grain like barley.
