Ingredients
  

For The Cheese

  • 2 cups whole milk or goat’s milk for authenticity
  • 2 tbsp lemon juice or vinegar to curdle the milk
  • 1 pinch salt

For The Bread

  • 2 cups whole wheat flour
  • 1/2 tsp salt
  • 3/4 cup water
  • 1 tbsp olive oil

Instructions
 

1. Make the Cheese

  • Heat the milk in a saucepan over medium heat until it begins to steam (do not boil).
  • Add the lemon juice or vinegar and stir gently. The milk will curdle, separating into curds and whey.
  • Remove from heat and let sit for 5-10 minutes.
  • Line a strainer with cheesecloth and pour the curdled milk through it. Let the whey drain out.
  • Press the curds gently to remove excess liquid. Sprinkle with salt and shape into a small round.

2. Make the Bread

  • In a bowl, combine the flour and salt. Slowly add water and mix until a dough forms.
  • Knead the dough on a floured surface for 5-7 minutes until smooth.
  • Divide the dough into 4 equal portions and roll each into a thin, flat circle.
  • Heat a skillet over medium heat and brush with olive oil. Cook each piece of dough for 2-3 minutes per side until lightly browned.

3. Serve

  • Slice or crumble the fresh cheese.
  • Serve it alongside the warm, freshly made bread.
