For The Cheese
- 2 cups whole milk or goat’s milk for authenticity
- 2 tbsp lemon juice or vinegar to curdle the milk
- 1 pinch salt
For The Bread
- 2 cups whole wheat flour
- 1/2 tsp salt
- 3/4 cup water
- 1 tbsp olive oil
1. Make the Cheese
Heat the milk in a saucepan over medium heat until it begins to steam (do not boil).
Add the lemon juice or vinegar and stir gently. The milk will curdle, separating into curds and whey.
Remove from heat and let sit for 5-10 minutes.
Line a strainer with cheesecloth and pour the curdled milk through it. Let the whey drain out.
Press the curds gently to remove excess liquid. Sprinkle with salt and shape into a small round.
2. Make the Bread
In a bowl, combine the flour and salt. Slowly add water and mix until a dough forms.
Knead the dough on a floured surface for 5-7 minutes until smooth.
Divide the dough into 4 equal portions and roll each into a thin, flat circle.
Heat a skillet over medium heat and brush with olive oil. Cook each piece of dough for 2-3 minutes per side until lightly browned.
