Ingredients
  

  • large pomegranate seeds removed
  • 2 cups fresh spinach or a mix of arugula and lettuce for variety
  • 1 cucumber sliced
  • 1/2 red onion sliced
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • crushed nuts (such as almonds or walnuts) optional

Instructions
 

1. Prepare the Pomegranate

  • Cut the pomegranate in half and remove the seeds. Gently tap the outside of the fruit with a spoon to release the seeds into a bowl. Discard the white pith.

2. Assemble the Salad

  • In a large bowl, combine the fresh spinach (or greens), cucumber slices, and thinly sliced red onion.
  • Sprinkle the pomegranate seeds over the top.

3. Make the Dressing

  • In a small bowl or jar, whisk together olive oil, honey, lemon juice, and salt. Adjust the sweetness and acidity to taste.

4. Dress and Serve

  • Drizzle the dressing over the salad and toss gently to combine.
  • Optionally, garnish with crushed nuts for added crunch and texture.

5. Enjoy
