Preheat the oven to 350°F (175°C).
In a bowl, mix the whole wheat flour, coriander, and salt.
Add the honey and olive oil to the dry ingredients, stirring until a crumbly dough forms.
Gradually add water, a tablespoon at a time, until the dough holds together but is not sticky.
Roll the dough out thinly on a floured surface, about 1/8 inch thick.
Cut the dough into small rounds or squares, mimicking the shape of wafers.
Place the wafers on a baking sheet lined with parchment paper.
Bake for 8–10 minutes, or until lightly golden and crisp.
Let the wafers cool before serving.
