Ingredients
  

  • 2 cups chicory leaves or dandelion greens, for a bitter flavor
  • 1 cup parsley leaves
  • 1/2 cup arugula (rocket lettuce) or watercress
  • 1 small red onion
  • 2 tbsp olive oil
  • 1 tbsp lemon juice or vinegar
  • 1 pinch salt
  • fresh mint leaves optional

Instructions
 

1. Prepare the Bitter Herbs

  • Wash and thoroughly rinse the chicory, dandelion greens, parsley, and arugula (if using).
  • Pat the greens dry using a clean cloth or paper towel.
