Barley Bread

- 2 cups barley flour
- 1/2 tsp salt
- 1 tbsp honey
- 1/2 cup water
- 1/4 cup olive oil
- 1/2 tsp baking soda
1. Prepare the Dough
In a large mixing bowl, combine the barley flour and salt.
Add the baking soda (if using) and mix well.
Gradually add the water while stirring the flour mixture with your hand or a spoon. Add the honey and olive oil (if using) to the mixture and knead the dough until it comes together. You want it to be smooth, but not sticky. If it’s too dry, add a bit more water.
3. Shape the Dough
Divide the dough into smaller portions and roll each into a flat circle or oval about 1/4 inch thick.
In biblical times, the bread would have been cooked on a stone or in a clay oven, but today you can use a skillet or griddle.
4. Cook the Bread
Heat a cast-iron skillet or heavy pan over medium heat.
Place the dough on the hot skillet and cook for about 2-3 minutes on each side, until golden brown spots appear.
Flip the bread and cook the other side for another 2-3 minutes until it is lightly browned and cooked through.
5. Serve
Allow the bread to cool slightly, then serve. This bread pairs wonderfully with a variety of dishes, from soups to stews, or simply with a spread of butter or honey.
